Chicken Cutlets a la Aunt Carmela

Every year my Aunt Carmela and Uncle Tony would stop at our house on their way to Florida for the winter. And every year my Aunt Carmela would make us chicken cutlets. It took me a few years to figure out her recipe as I was just a kid when they were visiting, but here it is:

Ingedients
This recipe will feed 4 people, but you can easily cut it in half or double or triple it!
  • 2 large chicken breasts
  • 1c flour
  • 2-3 large eggs, beaten
  • 1-2tb milk
  • 1-2tb parmesan cheese
  • 1-2c italian breadcrumbs
  • olive oil
Directions
  1. Preheat oven to 375 degrees.
  2. Slice the chicken breasts in half (or thirds) lengthwise. Pound thin with a meat tenderizer (or the bottom of a pot!) until they are about 1/2" thick. 
  3. Set up your "stations" in 3 pie dishes:
    1. Flour
    2. Eggs, milk and parmesan cheese mixed together
    3. Italian breadcrumbs 
  4. Dredge the chicken in the flour, then lightly shake off excess flour before dipping it in the egg mixture. Then dredge in the breadcrumbs before placing on a greased cookie sheet.
  5. Drizzle the chicken with a generous amount of olive oil.
  6. Bake for 20-30 minutes, flipping halfway through.
  7. Enjoy!
