Chicken & Green Bean Stir Fry

It doesn't get much easier than this, which makes it one of my go-to recipes for a busy weeknight. And as far as some of my recipes go, this one is quite healthy. Enjoy!

INGREDIENTS
  • 1lb ground chicken or turkey
  • 1lb green beans, trimmed
  • 1/4cup lite soy sauce
  • 1/8cup honey
  • crushed red pepper to taste
DIRECTIONS
  1. Heat a little oil in a skillet at high heat. Add green beans and cook until they are a little browned. You want them cooked, but still crisp. NO MUSHY GREEN BEANS!
  2. Remove green beans from skillet and reduce heat down to medium heat. Add ground chicken (or turkey) and cook through.
  3. Season it with soy sauce, honey, and crushed red pepper. Taste it. Then add more of whatever you want (seriously folks, I've never actually measured for this recipe).
  4. Take off heat and add back your green beans and stir until combined.
  5. Serve over rice or couscous.
