My take on guacamole

Who doesn't love guac and chips?? Right!?  But as anyone who loves avocados knows, they don't keep very well once opened. So I went about creating a simple recipe that is enough for 2 people to share as an appetizer, or I'm not going to lie to you, this is sometimes my lunch. Enjoy!

INGREDIENTS

  • 1 ripe avocado, not firm but not too squishy
  • 1/4 red onion, minced
  • 1 tablespoon lime juice
  • 1 teaspoon dried cilantro
  • salt and pepper to taste
DIRECTIONS
  1. Cut open your avocado and spoon out into a bowl.
  2. Mash up with a fork to your desired consistency.
  3. Mix in red onion, lime juice, cilantro, salt and pepper.
  4. Enjoy with chips or on toast or right out of the bowl.
