Speidinis

I'm all about the comfort food right now. Between COVID19 wreaking havoc across the world, not being able to socialize or entertain or see my parents, and my favorite old dog showing signs of aging ... I'm really trying to take my time in the kitchen these days and am going back to some of my favorite family recipes.

Speidinis are an Italian classic that my mom used to make for us growing up. There are enough steps that having helpers was always appreciated, and I was always happy to jump in because this was one of my favorite meals. Especially when she would pair it homemade mashed potatoes.

So here we go ...

INGREDIENTS 
This recipe will feed 4 people, but you can easily cut it in half or double or triple it!
  • 2 large chicken breasts
  • 1c flour
  • 2-3 large eggs, beaten
  • 1-2tb milk
  • 1-2tb parmesan cheese
  • 1-2c italian breadcrumbs
  • olive oil
  • sweet onion, quartered and broken apart into pieces
  • skewers 
DIRECTIONS
  1. Preheat oven to 375 degrees.
  2. Slice the chicken breasts in half (or thirds) lengthwise. Pound thin with a meat tenderizer (or the bottom of a pot!) until they are about 1/2" thick. Then cut into 1/2"-1" strips. 
    1. Alternatively you can purchase the thin chicken breasts at the grocery store and just slice into strips.
  3. Set up your "stations" in 3 pie dishes:
    1. Flour
    2. Eggs, milk and parmesan cheese mixed together
    3. Italian breadcrumbs 
  4. Dredge the chicken in the flour, then lightly shake off excess flour before dipping it in the egg mixture. Then dredge in the breadcrumbs and place on a clean plate.
  5. Place 1 piece of onion on your skewer. Roll your chicken tightly and place that on the skewer next. Follow it up with another piece of onion. Repeat until you're out of chicken. 
  6. Drizzle the chicken with a generous amount of olive oil.
  7. Bake for 20-30 minutes, flipping halfway through.
  8. Enjoy!
