Lemon thyme pork chops

 Earlier in the week I had taken pork chops out of the freezer and really didn't know what I was going to do with them. So I decided to re-create it and measure. And here's what I came up with ...

INGREDIENTS

  • olive oil
  • 4 pork chops
  • flour, seasoned with salt and pepper
  • 2 tb butter
  • 1 1/2 cups chicken stock
  • 3/4 cups white wine
  • 1 lemon
  • 2 1/2 tsp thyme
DIRECTIONS
  1. Heat your olive oil in a pan over medium-high heat.
  2. Pat dry your pork chops and bread them with your seasoned flour. Place in your pan and cook for 2-3 minutes per side. Take out and put on a plate to the side.
  3. Add in your butter and stir until melted. Sprinkle in enough flour to create a peanut butter type consistency. Keep stirring and do not let it burn! (You can always lower your heat if you're worried).
  4. Add in your chicken stock and stir. 
  5. Add in your white wine and stir.
  6. Add in the juice of 1 lemon and stir.
  7. Season with your thyme, plus more salt and pepper. 
  8. Place your pork chops back in the pan, lower your heat, cover and simmer for 5-10 minutes (depending on the thickness of your pork chops).
  9. Enjoy!
