
Ingedients
This recipe will feed 4 people, but you can easily cut it in half or double or triple it!
- 2 large chicken breasts
- 1c flour
- 2-3 large eggs, beaten
- 1-2tb milk
- 1-2tb parmesan cheese
- 1-2c italian breadcrumbs
- olive oil
- Preheat oven to 375 degrees.
- Slice the chicken breasts in half (or thirds) lengthwise. Pound thin with a meat tenderizer (or the bottom of a pot!) until they are about 1/2" thick.
- Set up your "stations" in 3 pie dishes:
- Flour
- Eggs, milk and parmesan cheese mixed together
- Italian breadcrumbs
- Dredge the chicken in the flour, then lightly shake off excess flour before dipping it in the egg mixture. Then dredge in the breadcrumbs before placing on a greased cookie sheet.
- Drizzle the chicken with a generous amount of olive oil.
- Bake for 20-30 minutes, flipping halfway through.
