Who doesn't love guac and chips?? Right!? But as anyone who loves avocados knows, they don't keep very well once opened. So I went about creating a simple recipe that is enough for 2 people to share as an appetizer, or I'm not going to lie to you, this is sometimes my lunch. Enjoy!

- 1 ripe avocado, not firm but not too squishy
- 1/4 red onion, minced
- 1 tablespoon lime juice
- 1 teaspoon dried cilantro
- salt and pepper to taste
DIRECTIONS
- Cut open your avocado and spoon out into a bowl.
- Mash up with a fork to your desired consistency.
- Mix in red onion, lime juice, cilantro, salt and pepper.
- Enjoy with chips or on toast or right out of the bowl.
